Description
Ferdinando Principiano’s Dolcetto d’Alba (often labeled as Sant’Anna or Dosset) is a vibrant, organic, and unoaked red from Monforte d’Alba, offering a refreshing and authentic expression of the grape. It features bright red cherry, raspberry, and violet aromas with earthy,, iron-like, or mineral undertones. The palate is typically light-to-medium bodied with crunchy acidity, fine tannins, and a pleasantly bitter, fresh finish, making it a perfect, versatile pairing for charcuterie, pasta, and pizza.
Nose: Fresh dark cherries, red currants, violets, menthol, and sometimes a hint of white pepper or earthy herbs.
Taste: Refreshing, crunchy, and, in some vintages, slightly “raw” or, rustic feel due to natural, minimal intervention.
Pairing: Antipasti & Charcuterie: Mortadella, salumi platters, olives, and salty cheese.
Pasta & Pizza: Pasta with pork ragu, mushroom pizza, or pasta with fresh tomato and basil.
Main Courses: Grilled chicken, roasted white meats, or even grilled trout, due to its light tannins.
Local Pairings: Traditional Piedmontese dishes like bagna cauda or vitello tonnato.
