Description
This wine is produced with grapes selected from the Marne Bianche vineyard on the Maternigo Estate. The wine is obtained according to the ancient technique of Ripasso, in other words, through the refermentation of one part of Valpolicella wine produced in October on the marc of Amarone and Recioto. Aging is carried out in Slavonian oak barrels for approximately 15 months followed by a further 6 months in the bottle. This is an elegant wine that is complex and reflects the style of the family.
Nose: Complex and intense, with prominent red fruit notes like cherry, raspberry, and red currant, often complemented by hints of pepper, cinnamon, vanilla, cocoa, and licorice.
Taste: Well-structured and harmonious, offering a blend of fresh, vibrant fruit and the deeper, richer characteristics derived from the ripasso method (re-fermenting on Amarone skins). The taste is warm and round, featuring silky, refined tannins.
Pairing: It pairs best with rich, savory dishes like roasted or grilled red meats, game (venison, boar), hearty stews, and mature cheeses. It also complements tomato-based pasta, spicy sausage, and risotto.
