Inspired by Kyoto’s seasons and crafted with a rice spirit base and pure Fushimi water, KI NO BI combines traditional dry gin style with a distinct Japanese character. Using botanicals such as yuzu, akamatsu wood, bamboo, gyokuro tea, and sansho pepper, the ingredients are distilled in six elements and blended in harmony for a refined, complex profile.
Nose: Bright kumquat and yuzu with green tea and pine-forward juniper
Taste: Fresh yuzu and orange oil with piney juniper, unfolding into earthy herbal tones, finishing crisp with citrus, lingering ginger, and subtle spice heat
